Broiling. Direct Flame. High heat. A great way to cook meats, fish, vegetables and even fruits. Each food has its own broiling time. Preheat and slightly oil your broiler pans. Broil no more than 10 minutes. Longer cooking time needed? Broil a crusty surface on it before or after you bake or roast it. Putting a baked or roasted food under the broiler will add a crispy crust, a cheesier cheese, a golden brown surface.
